S1 : Episode 2 : French Toast

Eat Local. Eat Well :: French Toast w Poach Nectarines & Passion fruit Coconut Yoghurt

We’ve taken a classic breakfast favourite and given it a Taste Byron Bay twist!  Using local Organic Sourdough from the legends at The Bread Social, and teamed it with some stunning seasonal local nectarines, coconut yoghurt, passionfruit from my friends garden and of course we’ve also used local organic eggs and local Norco milk too!

I always think the secret to an great meal is using local, seasonal produce, and building flavours along the way ……. oh yeah ……. and keeping it simple!

For the nectarines you seriously only need to add to a non-stick pan some brown sugar and a little water before covering the pan, and let the nectarines poach on a medium heat until the nectarines are “just” cooked.  Cut your sourdough nice and thick and let them sit in the egg and milk mixture for 3-5 minutes, to soak up all the goodness!  Oh  yes …… and it is best to use 1 day old bread for this recipe :O)
