This is literally the easiest dessert we’ve ever made, hands down! And even better …….. it tastes ridiculously good too!! Making this simplified French classic the perfect finish to any family meal.
Ingredients – serves 6:
3 granny smith apples – cut into wedges approx 1/2 cm thick
1 cup of soft brown sugar
1 cinnamon quill
1 star anise
1 cup warm water
1 sheet of puff pastry
2 tbs of milk
Method:
- pre-heat your oven to 180 Celsius (or as per your puff pastry pack instructions)
- pre-heat a non-stick fry pan – add the sliced apple and lightly colour on each side
- add the brown sugar to the fry-pan and gently coat the apple slices – add the water and stir well to combine and dissolve the sugar – add the cinnamon and star anise
- allow to cook on a medium heat for approx 5 mins until the syrup has thickened slightly and reduced by approx 1/4 – allow to cool slightly for approx 5 mins
- remove the cinnamon and star anise with a metal spoon – using metal tongs remove the apple and neatly place in your oven proof pie dish in a fan shape
- carefully pour the hot sugar syrup over the apples – place the puff pastry on top of the apples – cutting the edges as necessary to fit inside the dish
- using a pastry brush – brush the top of the puff pastry with milk – gently press the pastry to the edge of the dish
- bake for approx 15-20 mins or until golden
- remove from the oven and allow to cool for 5 mins
- place a plate with high sides (so the syrup doesn’t spill over the end) over the top of your pie dish – firmly holding the pie dish and plate together – quickly and carefully flip them over
- serve with a good quality vanilla ice-cream in the middle of your Tarte Tatin
If you are cooking this before your friends arrive, cook the Tarte Tatin and leave it in the pie dish. Then simply warm through and flip the Tarte Tatin just before serving. And sit back and enjoy all the lovely complements that are about to come your way!
