Fish Tacos are synonymous with easy breezy coastal living, healthy eating and a day well spent catching epic waves! So what better way to celebrate local fresh mullet, and the Byron lifestyle …… than with a fresh and flavour jumping Fish Taco!
I chose to use local mullet for this recipe, because it was soooooooo fresh I swear it was winking at me at our local fish shop Bay Seafood, and when I asked the boys when it was caught they said “just last night”, and given that I was at the fish shop at 6:30am ……. (and unless you are out with bait and a line yourself each day) ……. I’m thinking it doesn’t get much fresher than that! Oh yes, and the mullet is also sustainable, which is another big tick, from us in our pursuit of favour and helping our environment all at the same time!
